Pine Bark Cookies

2 sticks Land O’Lakes butter
1 cup brown sugar
approximately 1 ˝ sleeves saltine crackers
1 package white chocolate chips |

Pre-heat oven to 375.
Line 15”x10” (jelly roll) pan with foil. Arrange crackers to cover the bottom.
In saucepan, add butter and brown sugar. On medium heat, mix constantly until it reaches a boil. Boil two minutes. Pour over crackers and spread out evenly. Bake for 8 minutes. Remove from oven and sprinkle white chocolate chips all over. As soon as the chips start melting, spread the white chocolate evenly. Allow to cool. Peel back foil and break into pieces.
